
Sunflower, also known as sunflower and sunflower (Helianthus annuus), is a large annual plant, belonging to the Asteraceae family (Compositae), whose flowers are grouped in large flower heads. The genus Helianthus includes about fifty species, all originating from North America, including the Jerusalem artichoke (Helianthus tuberosus L.).
This plant is very cultivated for its seeds rich in good quality edible oil (about 40% of their composition). Sunflower is, along with rapeseed and olive trees, one of the three main sources of edible oil in Europe.
